MEDIEVAL MILK

The milk drunk by medieval people came from cows, goats and sheep.

Wealthy landowners took the use of milk to another level by having it turned into a variety of things for use in their own kitchens including ...

  • soft cheese
  • curds







They were even known to enjoy thick rich cream with strawberries.

Milk was also used for making custard and custard tarts, cream soups and hot drinks (called caudles or possets). The richest, softest cream was sometimes used to make a type of cheesecake – again the type of dish enjoyed only by the wealthy as a special dessert.

Cows were kept mainly for their milk by poorer people, often making their own curds and whey, butter, cheese and buttermilk. A common diet for workers in the fields was bread with hard skim-milk cheese.
